I decided to do this little thing on Instagram since they have mini videos now. I call it watchmecook.  I video myself throughout meal prep and then post it with the hashtag “watchmecook” and then whatever meal it is. Here’s what I’ve done so far:

I decided to do this right before they got video, or maybe immediately after, and tried it with still shots first in this #watchmecooklunch bit.




The first pic. Peppers, onion, and some Moroccan seasoning from Victoria Gourmet.




I added diced, pre-cooked chicken, tomatoes, some zucchini, and some balsamic vinegar. I think I squoze a lime over it, too.




Then I ate it, topped with feta. YUM.


Anyway, if you want, search those hashtags on instagram and #watchmecook. Dinner tonight was amazing, by the way, even if it isn’t that pretty in the bowl.  If you want to try it, here you go:


Thinly slice 2 potatoes. I actually used one potato and about 7 fingerling potatoes from one of those mixed bags.  Dice an onion. Fry in a lightly oiled pan until tender. Add a diced red bell pepper (or several mini bells, which is what I used) and a half pound of diced smoked turkey sausage.  Fry for about five minutes while you dice a few mushrooms (or an entire box if you’re me), some pickled pepperoncini, a tomatillo because they add a really nice brightness to things, and a tomato (which I forgot but it would have been a delicious addition).  Throw it all together and let it fry for about five minutes, then add a handful of spinach.  Beat together 3-4 eggs, about a quarter of a cup of cheapo Parmesan from a plastic jar, and a table spoon of Victoria Gourmet Sicilian seasoning. When the spinach is wilted, pour the egg mixture over the pan and put it in the oven at about 350° until the eggs set. Serve with another sprinkle of Parm if you like. It’s YOM.
